Honestly ever single class has fantastic solo build options, so if there are any that you are leaning towards because you like them just go for it. If you look up "gw2 (insert class here) open world solo build" you can find tons of very strong builds. That said I think the easiest right now are probably ranger, engineer, guardian, and necro.

Reaper is a great option for general open world stuff but isn't as good at soloing champions as scourge is. It's also just a selfish power dps class in group content. You'll get them all unlocked eventually but can't go wrong with scourge. In my opinion Harbinger is the best one and the most fun.
Scared by the GW1 necromancer whom could maintain a huge horde, 30+ skeletons. Though it later got downsized. But it was a large mass of bodies that groups going through the more difficult cantha missions, would constantly beg for necromancers to carry them. So yeah, the GW2 necromancer is a shadow of the performance of the past.
