I was testing this in the Helicopter Showcase, using L-SHIFT to pull in collective, and L-CTRL for down collective, until in a nice hover 3-5 feet over the pavement. I normally use the throttle half of my Thrustmaster HOTAS for collective inputs. I don't even use the stick half in Arma, preferring the mouse and keyboard for attitude inputs.

You cannot. You can have an AI in the gunner seat and tell them what to fire at though. Press ' T ' to lock onto targets and your gunner will target them. The control over the helicopter is insane if you learn AFM. BFM teaches you that throttle doesn't matter, in AFM throttle matters at every speed even you are flying straight. It takes far more concentration and skill to fly AFM.
