Just bagged a Grizzly and Cougar northwest of Strawberry near the 'hidden' Trapper, got the Cougar and Bear saddles out of them, looks like I posted this too early hah...Alligator still looks the best, the Bear is similar to this one, and weirdly enough the Cougar is a touch behind looks wise. Cougar and Bear have similar stats to the Alligator.

From what I remember, the beaver saddle is best, all you need is a beaver. You know that all saddles have stats, just pick the one with the highest numbers. I just bought the upland saddle and it is actually insane. The price tag is also insane though. It's a little over $600 but it is absolutely amazing.
